It’s not just a cafe, it’s a place where coffee is crafted by hand; measured, studied, carefully observed and tasted.

They have Aeropress, Pour Over and Chemex and they can properly foam milk and make pretty shapes on your latte.

They take care to buy freshly roasted beans properly sourced from ethical and organic locations.

Parlour Coffee promises to be the best coffee house in Winnipeg.

I think they make Starbucks look “totally pants”.

(Their official opening will be on Saturday Sept 3 2011. Today was just the start of the warm up.)

This is what the place looked like back in April 2011. Before that it was a shoe shop called Cha Cha Palace.

Nils Vik pours an aeropress carefully.

The originator and owner of Parlour Coffee is Nils Vik.

He was, is still, and/or will be in the future a photographer and designer.

Maybe not so much since he has a cool coffee bar to run.

The neighbourhood gets a bit of a lift, from coffee, not cheap beer!
